The Artisan Sausage-Making Process

At Boerie Bangers, every sausage starts with a commitment to quality and tradition. Here’s how our expert butchers craft each batch of our boerewors-inspired sausages:

  • Selecting Premium Cuts: We handpick only the finest cuts of meat, prioritising freshness and flavour. Our pork and beef come from trusted local farms that embrace ethical, sustainable practices, ensuring every bite is rich and pure.

  • Preparing the Ingredients: The meat and fat are carefully cut into chunks and kept chilled to preserve texture and taste. We blend these with a signature mix of fresh herbs and spices, inspired by classic boerewors recipes, for a unique flavour profile.

  • Grinding and Mixing: The chilled meat and fat are ground to the perfect consistency and then thoroughly mixed with our house blend of seasonings. 

    • We initially chose the double-minced texture of traditional British sausages, which are most familiar to our butcher and the British palate. This ensured that the meat thoroughly absorbed the blend of spices for maximum flavour.

      However, this proved controversial to our panel of expert boerewors connoisseurs, who immediately called it out lacking traditional boerewors' much-loved texture. So you'll find a meatier texture than boerewors, but we might keep the British version as an option for customers who want to keep it more in line with bangers.

  • Hand Stuffing: Our butchers use natural casings and fill them by hand (manually feeding the meat into a mincer and manually transferring the sausages to packaging trays) to create traditional sausages. This artisanal approach gives each sausage a satisfying snap and an authentic look and feel.
